Cranberry Nut Bread
- 1 c. whole raw cranberries
- 1 c. English walnuts, chopped
- 1 Tbsp. plain flour
- 2 c. flour less 1 Tbsp., sifted
- 1 1/2 tsp. baking powder
- 1/2 tsp. soda
- 1/2 tsp. salt
- 2 eggs, slightly beaten
- 1 c. sugar
- 2 Tbsp. shortening, melted
- Juice of 1 orange
- Rind of 1 orange, grated
- Boiling water
- Preheat oven to 350u0b0.
- Dredge cranberries and nuts with 1 tablespoon flour.
- Set aside.
- In a measuring cup, combine eggs, shortening, orange juice, and orange rind.tdd enough water to make 1 cup liquid.tift dry ingredients together, twice.
- Stir liquid into dry ingredients until well mixed.
- Fold in cranberries and nuts.
- Bake in a greased loaf pan for 1 hour.
- Remove from pan and cool on a rack.
- Wrap in foil and store in refrigerator or freezer.
- Makes 1 loaf.
