Cocoa Crunch Cookies ( Gluten Free )
- 2 cups corn flakes, crushed
- 1 cup brown rice flour
- 1 cup gluten free blend flour
- 3 tablespoons premium cocoa powder
- 1 teaspoon cinnamon
- 1 12 teaspoons baking powder
- 12 teaspoon baking soda
- 12 cup butter
- 1 cup granulated sugar
- 2 eggs
- 3 tablespoons yogurt
- Preheat oven to 375 degrees Fahrenheit
- Line a large cookie sheet with parchment paper
- Blend flour, gum, cinnamon, cocoa, b. powder and b. soda together in a small bowl.
- Set aside
- In a large bowl mix butter and sugar together and form a smooth paste
- Add eggs to butter/sugar mixture and beat with an electric mixer on medium speed until smooth and creamy
- Put corn flakes in a large bag and crush lightly with a rolling pin before adding to butter/sugar mixture.
- Stir in yogurt and combine all ingredients together well
- Mix in dry ingredients blending everything with flour to make a soft ball of dough
- Take small amounts of dough and roll it in your hand to make a ball.
- Place balls 2 inches apart on cookie sheet and bake for 10 minutes until lightly browned
- Remove from oven and place on wire rack to cool completely.
