Peach-Amaretto Sundaes

  1. Combine ice cream, 3 tablespoons amaretto and 1 tablespoon brandy in large bowl.
  2. Stir to blend well.
  3. Cover and freeze until firm.
  4. (Can be prepared 2 days ahead.
  5. Keep ice cream mixture frozen.)
  6. Combine peaches, sugar, remaining 2 tablespoons amaretto and remaining 1 tablespoon brandy in another large bowl.
  7. Toss to coat.
  8. Let peach mixture stand until sugar dissolves, tossing occasionally, about 15 minutes.
  9. Divide sliced peaches among 6 dessert bowls or wineglasses.
  10. Spoon vanilla ice cream mixture atop peaches.
  11. Sprinkle desserts with crushed amaretti cookies.
  12. Serve immediately.
