Turtles Cheesecake
- 1 14 cups graham cracker crumbs
- 12 cup finely chopped pecans
- 14 cup butter, melted
- 2 tablespoons sugar
- 2 (8 ounce) packages light cream cheese, softened
- 12 cup sugar
- 1 tablespoon vanilla
- 2 eggs
- 2 tablespoons flour
- 34 cup regular evaporated milk (such as carnation)
- 12 cup sour cream
- 14 turtles chocolate decorative candies, chopped
- Crust: Preheat oven to 300.
- Stir together graham cracker crumbs, pecans, butter & sugar in a bowl until well combined; press into bottom and up the sides of a 9-inch springform pan.
- Bake 12 minutes or until golden & firm;refrigerate until chilled.
- Filling: Beat cream cheese, sugar & vanilla until smooth.
- Beat in eggs & flour.
- Gradually beat in evaporated milk and the sour cream.
- Stir in chopped turtles; pour over crust.
- Bake 25 minutes.
- Cover loosely with foil, bake an additional 30-40 minutes or until edges are set but centre still jiggles slightly.
- Let cool to room temp on baking rack.
- Run a sharp knife around edge of pan; remove pan edges.
- *This cheesecake is nice decorated on top with additional turtle snackin' size candies (in a circular pattern nearly to the outer edge of cake, or (three candies placed triangle fashion) in the middle, or both!)
- and dripped melted chocolate and/or dripped melted caramels.
