Bok Choy, Carrots And Green Beans Recipe
- 1 tsp peanut oil
- 2 sm shallots chopped
- 2 med carrots sliced diagonally
- 1 c. cut-up green beans
- 1 c. minced bok choy
- 1/3 c. low-fat low-sodium chicken broth
- 1 Tbsp. lite soy sauce
- Heat the oil in a wok or possibly skillet over high heat.
- Add in the shallots and saute/fry for 3 min.
- Add in the carrots and stir fry for 3 min.
- Add in the green beans and stir fry for 2 min.
- Add in the bok choy and stir fry for 2 min.
- Add in the broth and simmer for 2 min.
- Add in the soy sauce and serve.
- This recipe yields 6 servings.
- Serving size: 1/2 c..
