Scrambled Eggs With Diced Bread
- 1 medium egg
- salt and pepper
- 1 tablespoon water
- 1 slice whole wheat bread (dried in oven or toaster, made into croutons)
- 14 teaspoon minced fresh herb (parsley, chives, rosemary, or dash of fried herbs to taste)
- Break an egg into bowl; add salt, pepper, and water.
- Beat thoroughly.
- Pour into small preheated nonstick skillet.
- Cook over moderate heat, stirring gently.
- When egg is almost done, sprinkle with croutons and herbs.
- Scramble and serve.
