Japanese Sesame Chicken Skewers

  1. In a large bowl, whisk together ginger, mirin, soy sauce and sesame oil.
  2. Add chicken and toss to coat.
  3. Let stand for 15 minutes.
  4. Meanwhile preheat grill to medium high.
  5. Remove chicken from marinade, reserving marinade.
  6. Thread chicken and red pepper onto skewers.
  7. In a small saucepan, bring marinade to boil.
  8. Reduce by half.
  9. Brush skewers with marinade.
  10. Grill skewers 3-5 minutes per side.
  11. Serve sprinkled with sesame seeds.
