Shrimp Rice Creole Recipe
- 1/2 c. diced green pepper
- 1/4 c. diced celery
- 2 1/2 c. tomatoes
- 2 teaspoon salt
- 1 sm. bay leaf (optional)
- 1/8 teaspoon Tabasco sauce
- 1/2 c. chopped onions
- 1/4 c. butter
- 2 teaspoon chopped parsley
- 1/4 teaspoon pepper
- 1/2 pound uncooked shrimp
- 4 c. warm cooked rice
- Cook peppers, onion and celery in heated butter till soft.
- Add in tomatoes, parsley and seasonings.
- Simmer about 30 min, stirring occasionally till thickened.
- Clean and devein uncooked shrimp.
- Add in to sauce and simmer till shrimp is tender; about 10 min.
- Remove bay leaf and serve over rice.
