Rustic Sunchoke Mash

  1. Place sunchokes in medium pot with broth and garlic.
  2. Bring broth to a boil, reduce heat to low, and simmer, partially covered, 15 minutes, or until very tender.
  3. Mash sunchokes and garlic to chunky-smooth consistency with potato masher.
  4. Stir in butter, nutmeg, and salt and pepper to taste.
  5. Garnish with chives.
