Chiquita Bonita's Hawaiin Carrot Muffins
- 2 cups flour
- 2 teaspoons baking powder
- 2 teaspoons cinnamon
- 1 12 teaspoons baking soda
- 12 teaspoon salt
- 12 teaspoon nutmeg
- 3 eggs
- 1 12 cups sugar
- 34 cup mayonnaise
- 0.5 (14 ounce) can pineapple, crushed, undrained
- 2 cups carrots, shredded
- 12 cup pecans
- 12 cup raisins
- Combine flour, baking powder, cinnamon, baking soda, salt and nutmeg; set aside,.
- In large bowl, beat eggs, sugar, mayonnaise and pineapple until well blended.
- (You can freeze the remaining 1/2 can of pineapple for next batch).
- Blend in dry ingredients with fork.
- Mix only until all flour has been moistened.
- Fold in carrots and pecans and raisins.
- Spoon batter into muffin cups, filling to the top.
- Bake at 400F for 15-20 minutes or until done.
- Makes approximately 15 large muffins.
