Chiquita Bonita's Hawaiin Carrot Muffins

  1. Combine flour, baking powder, cinnamon, baking soda, salt and nutmeg; set aside,.
  2. In large bowl, beat eggs, sugar, mayonnaise and pineapple until well blended.
  3. (You can freeze the remaining 1/2 can of pineapple for next batch).
  4. Blend in dry ingredients with fork.
  5. Mix only until all flour has been moistened.
  6. Fold in carrots and pecans and raisins.
  7. Spoon batter into muffin cups, filling to the top.
  8. Bake at 400F for 15-20 minutes or until done.
  9. Makes approximately 15 large muffins.
