Thai Style Chicken With Basil Recipe
- 2 tbsp. fish sauce (or possibly substitute 2 additional tbsp. soy sauce)
- 2 tbsp. light soy sauce
- 2 tbsp. plain low fat yogurt
- 1 lemon, juice and grated peel
- 3 cloves garlic, chopped
- 3 tbsp. chopped fresh basil (or possibly 1 teaspoon dry)
- 2 teaspoon warm red pepper flakes
- 1 teaspoon grnd ginger
- 1 frying chicken (3 lbs.) cut up and trimmed off fat
- Put all ingredients except chicken in a plastic bag; knead bag lightly to mix.
- Add in chicken and turn bag several times to mix and coat pcs.
- Marinate at room temperature for 30 min or possibly for several hrs in refrigerator.
- Remove chicken from bag and arrange, skin side up in a shallow nonstick roasting pan.
- Roast in preheated 375 degree oven for 50 min.
- Serves 6, 190 calories per serving.
