Sausage and Brown Rice Skillet Meal

  1. Prepare rice according to package directions.
  2. While rice is cooking, in large nonstick skillet cook sausage over medium-high heat until no longer pink, stirring frequently to break up sausage.
  3. Remove sausage from skillet; cover with foil to keep warm.
  4. Drain excess fat from skillet.
  5. In same skillet cook onion for 2 minutes.
  6. Add beans, undrained tomatoes, corn sausage and cooked rice.
  7. Heat through.
  8. To serve, sprinkle with cheese.
  9. Serves 6 to 8.
