Spinach and Cheese Stuffed Chicken
- 2 whole Chicken Breasts (skinless And Boneless)
- 4 ounces, weight Monterey Jack Cheese, Shredded
- 2 cups Fresh Spinach, Chopped
- 1 Tablespoon Olive Oil, Plus More For Brushing
- Kosher Salt
- Pepper
- Granulated Garlic
- Cut a deep, 2-inch wide pocket in the thickest part of each chicken breast.
- Stuff with cheese and spinach.
- Brush chicken with olive oil and season with salt, pepper and granulated garlic.
- Heat 1 tablespoon olive oil in a frying pan over medium heat.
- Cook chicken until browned and the thickest part of the breast is 155 degrees F, about 57 minutes per side.
