Lemon and Herb Seasoned Cheese
- 1 piece Mozzarella, cream cheese, or feta
- 6 seeds Coriander
- 3 seeds Cardamom
- 1 tsp Mustard seeds
- 6 seeds Black pepper
- 1/3 tsp Rock salt
- 1 clove Garlic (optional)
- 1 dash Oregano (dried is fine)
- 4 Basil (dried is fine)
- 1/2 Lemon
- 1 to 2 tablespoons Olive oil
- Wash the lemon in hot water and zest.
- Squeeze the juice from half the lemon and set aside.
- Using a pestle and mortar, crush the coriander, cardamom and black pepper.
- Add the peeled garlic, and crush.
- Add the lemon juice and peel to the mortar, and mix in the olive oil a little at a time.
- Add the salt.
- Arrange the sliced tomato and cheese on a plate, and pour on the lemon dressing.
- Sprinkle on the herbs to finish.
- I heated olive oil in a frying pan, and fried chopped garlic and spices.
- Then, I added the lemon juice and a tablespoon of balsamic vinegar.
- Another time, I added mustard seeds and fresh basil to marinate for 2 hours.
- I didn't add any garlic to this one.
- Here it is served with grilled vegetables and cream cheese.
- This is great for the summer season.
