Lemon and Herb Seasoned Cheese

  1. Wash the lemon in hot water and zest.
  2. Squeeze the juice from half the lemon and set aside.
  3. Using a pestle and mortar, crush the coriander, cardamom and black pepper.
  4. Add the peeled garlic, and crush.
  5. Add the lemon juice and peel to the mortar, and mix in the olive oil a little at a time.
  6. Add the salt.
  7. Arrange the sliced tomato and cheese on a plate, and pour on the lemon dressing.
  8. Sprinkle on the herbs to finish.
  9. I heated olive oil in a frying pan, and fried chopped garlic and spices.
  10. Then, I added the lemon juice and a tablespoon of balsamic vinegar.
  11. Another time, I added mustard seeds and fresh basil to marinate for 2 hours.
  12. I didn't add any garlic to this one.
  13. Here it is served with grilled vegetables and cream cheese.
  14. This is great for the summer season.
