BBQ Meatloaf Muffins
- 1 pound Lean Ground Beef
- 1 whole Egg
- 1/2 cups Garlic And Herb Breadcrumbs
- 1/2 cups Ketchup, Divided Use
- 1/2 Tablespoons Garlic Powder
- 2 pinches Cayenne Powder
- 1/4 teaspoons Salt
- 3 dashes Ground Black Pepper
- 1/4 cups BBQ Sauce
- 1/2 teaspoons Dried Basil, Crushed In Palm
- 1/2 teaspoons Dried Oregano, Crushed In Palm
- Preheat oven to 375 degrees Fahrenheit.
- In a large bowl, combine ground beef, egg, breadcrumbs, 1/4 cup of ketchup, garlic powder, cayenne, salt, and black pepper.
- (I didnt measure the cayenne or pepper, just use to taste.)
- Mix until thoroughly combined (time to get your hands dirty).
- Divide ground beef mixture between the 12 cups of a regular-sized muffin tin.
- Bake for 30 minutes.
- Meanwhile, combine the remaining 1/4 cup of ketchup, the bbq sauce, the basil, and the oregano.
- This will be your sauce.
- After the 30 minutes of baking are finished, spoon about 1 teaspoon of sauce on each meatloaf and bake an additional 10 minutes.
