Pork and Squash Ragout
- 1 lb pork loin, cubed
- 2 (14 ounce) cans diced tomatoes, undrained
- 1 (15 ounce) can kidney beans, rinsed and drained
- 1 cup squash, cubed (butternut or acorn)
- 1 12 cups chopped onions
- 1 12 cups chopped green bell peppers
- 2 teaspoons minced garlic
- 2 teaspoons dried Italian seasoning
- salt and pepper
- Combine all ingredients except salt and pepper in slow cooker.
- Cover and cook on low 6-8 hours.
- Season to taste with salt and pepper.
