Kirk's Low-Fat Manicotti
- 2 boxes manicotti
- 1-1/2 lb. 7% fat hamburger
- 1 lg. red onion, chopped
- 2 tbsp. safflower oil
- 4 cloves fresh garlic
- 1 tbsp. Italian seasoning
- 1 tsp. pepper
- 1 tsp. salt
- 2 pkg. (10 oz. each) frozen chopped spinach, thawed
- 1 qt. non-fat cottage cheese
- 1/2 cup Parmesan cheese
- 1 jar (4 lb.) Prego spagetti sauce with mushrooms
- 2 cups water
- 1/2 cup Parmesan Cheese for topping
- In large frying pan, brown the hamburger, onion, garlic, oil, Italian seasoning, salt and pepper (do not drain).
- Cool mixture for 10 minutes then add spinach, cottage cheese and parmesan cheese; mix thoroughly.
- Pour spagetti sauce and water in large, mix well.
- Boil manicotti noodles 7 minutes only, and drain and rinse with cold water.
- Spray bottom of two oblong glass baking dishes with nonstick spray and apply a layer of sauce.
- Carefully stuff noodles with meat mixture and arrange in pans.
- Cover with remainder of sauce.
- Sprinkle top with Parmesan cheese.
- Cover with aluminum foil and bake at 350F for approximately 50 minutes, then remove foil and bake another 10 minutes.
- Remove from oven and let cool 15 minutes.
- Ready to serve.
