Autumn Pear Salad

  1. In small bowl, whisk together vinegar, juice concentrate and mustard.
  2. Slowly add oil, whisking until blended and thickened.
  3. Season with salt and pepper.
  4. Divide greens among 6 individual serving plates.
  5. Top each with sliced pears, crumbled cheese, walnuts and cranberries.
  6. Drizzle each with some dressing and serve.
