Kaitai Fire Rice
- 1 cup rice
- 1 cup peas
- 1 onion
- 2 tbsp oil
- 2 eggs
- 2 tbsp soy sauce
- 1 tbsp ginger
- 1 clove garlic
- 1 Sriracha hot sauce
- 1 Kaitai Fire (or Tobasco) sauce
- boil/steam/prepare rice
- heat wok or pan until very hot
- fry onion, ginger, garlic in oil until onion becomes soft and transluscent
- add meat if desired
- add peas and other vegetables desired as well as the rice.
- fry for 1-2 minutes
- make open area in wok/pan.
- add one egg at a time, making sure to mix each thoroughly into the mixture
- cook the rice until egg is no longer observably runny, then add the soy sauce.
- mix well
- add sriracha to desired level of heat.
- add a few drops of kaitai (or tobasco) sauce for flavor
- serve hot with a hoppy IPA
