Crunchy Baby Potatoes

  1. Preheat the oven to 400F.
  2. Use a small sharp knife to cut thin slices into the potato, ensuring you don't cut all the way through.
  3. Place the potatoes in a bowl with the oil, salt and pepper and toss to coat.
  4. Place in a baking dish and roast for 35-40 minutes or until golden and crunchy.
