Crab Stuffed Baked Avocado
- 4 ounces, fluid Cream Cheese
- 6 ounces, fluid Crab Meat (drained Well If Using Canned)
- 1/4 cups Tomatoes, Chopped
- 1 Tablespoon Scallions
- 1/4 teaspoons Salt
- 1/4 teaspoons Pepper
- Pinch Cayenne Pepper
- 3 whole Large Avocados, Cut In Half, Pit Removed
- 1/2 cups Grated Parmesan Cheese
- Preheat oven to 400 degrees F.
- In a bowl, combine all the ingredients except the avocados and the Parmesan.
- Mix until well combined.
- Fit the hole in the avocado with crab mixture and top with generous amounts of cheese.
- Place avocados on a baking sheet or in the wells of a muffin tin.
- Bake at 400 degrees F until the cheese has melted, about 8-10 minutes.
