Holiday Mini Peppermint-Tini
- 12 ounces vodka
- 4 ounces coconut liquor (Not coconut rum)
- 6 miniature candy canes
- 14 cup dark chocolate
- ice
- Pulse candy canes in a food processor until crumbly, set aside on small plate.
- Melt chocolate in a small flat bowl in the microwave.
- The bowl should be just large enough to dip the mini martini glasses.
- (I recommend microwaving in small amount of intervals, 10-15 seconds at a time until just melted.
- ).
- Dip each glass in melted chocolate and then immediately dip in crushed peppermint; chill in the refrigerator to set until ready to serve.
- Using a cocktail shaker, first mix half the vodka and half the coconut liquor with ice and shake for 15 seconds, pour into chocolate peppermint rimmed glasses.
- This serves four mini cocktails.
- Repeat with remaining half of mixture and serve the remaining cocktails.
