Cornbread Pie
- 1 lb. ground beef
- 1 large onion, chopped
- 1 can condensed tomato soup
- 1 1/2 tsp. salt, divided
- 2 c. water
- 1/4 tsp. pepper
- 1 c. drained whole kernel corn
- 1 Tbsp. chili powder
- 1/2 c. chopped green pepper
- 3/4 c. cornmeal
- 1 Tbsp. flour
- 1 Tbsp. sugar
- 1 1/2 Tbsp. baking powder
- 1 egg
- 4 Tbsp. melted shortening
- 1/2 c. milk
- Saute beef and onion until lightly browned.
- Add soup, 1 teaspoon of salt, water, pepper, corn, chili powder and green pepper.
- Simmer 15 minutes.
- Place in lightly greased 1 1/2-quart casserole; set aside.
- Combine cornbread, flour, sugar, remaining 1/2 teaspoon salt and baking powder.
- Add remaining ingredients. Mix well.
- Spoon cornbread topping over meat mixture.
- Bake in preheated 400u0b0 oven for about 25 minutes.
