Flour-Free Falafel
- 1 34 dried garbanzo beans
- 2 garlic cloves
- 1 small onion
- 1 teaspoon ground coriander
- 1 tablespoon ground cumin
- 1 cup chopped cilantro
- 1 teaspoon salt
- 12 teaspoon pepper
- 12 teaspoon baking soda
- 1 tablespoon lemon juice
- canola oil, for pan frying
- Soak chickpeas in 4 inches of water for 24 hours.
- Drain beans and transfer to a blender will all other ingredients.
- Process until smooth, scraping the sides often.
- (Add 1-2 tbsp water if necessary, but keep mixture as dry as possible).
- Heat oil to 350.
- Form mixture into balls or patties on each side until browned, not more than 5 minutes.
