Carrot Muffins

  1. Preheat oven to 350 degrees F.
  2. Beat egg whites until stiff.
  3. Beat the egg yolks until thick and lemon colored.
  4. Add grated almonds and carrots to yolk mixture and mix well.
  5. Add dry ingredients to yolk mixture and mix.
  6. Fold whites into egg yolk mixture.
  7. Spoon into muffin cups.
  8. Bake for 30 minutes.
