Pepper Jelly Guacamole
- 5 ripe avacados, pitted and peeled
- 1 sm. ripe tomato, diced
- 1/4 red onion, diced
- 2 lemons, juice of
- 1/2 to 1 tsp. hot pepper jelly
- 1/2 tbsp. fresh cilantro, chopped
- 1/4 tsp. paprika
- 1/4 tsp. cumin
- 1/8 tsp. cayenne powder
- 2 cloves garlic, minced
- 2 to 3 dashes Mexican hot sauce
- Salt and fresh ground pepper to taste
- Chili powder (optional)
- In a large mixing bowl or mixer, add avacado flesh, garlic, cilantro and seasonings.
- In a seperate container mix together lemon juice, hot sauce and hot pepper jelly with a fork until smooth.
- Add mixture to mixing bowl.
- Blend together until reaching the desired consistency.
- Garnish with onion and tomato and serve.
