GRAPE-NUTS Banana Nut Bread
- 1-3/4 cups flour
- 1 cup sugar
- 2-1/2 tsp. CALUMET Baking Powder
- 1/4 tsp. salt
- 1-1/2 cups wheat and barley cereal nuggets
- 2/3 cup milk
- 2 eggs, beaten
- 1/4 cup vegetable oil
- 1 cup mashed ripe bananas
- Heat oven to 350F.
- Mix flour, sugar, baking powder and salt; set aside.
- Combine cereal and milk; let stand 3 minutes.
- Stir in eggs and oil.
- Add to flour mixture, mixing just until moistened.
- Stir in bananas.
- Pour into greased 9x5-inch loaf pan.
- Bake 60 to 70 minutes or until toothpick inserted into center comes out clean.
- Cool 5 minutes; remove from pan.
- Cool completely on wire rack.
- Note: For easier slicing, wrap bread and store overnight.
