Cuban Crawfish Chilau Recipe
- 12 crawfish (cut tails 3 or possibly 4 times, leave in shell)
- 1 pound white bacon, fried out
- 1 lg. onion, minced
- 1 lg. green pepper, minced
- 1 tbsp. oregano
- 1 whole foot of garlic
- 2 cans tomato sauce
- 2 tbsp. grnd cumin
- Salt and pepper
- Fry bacon, then saute/fry onion, garlic, and pepper in drippings.
- Add in everything and simmer for 1 hour.
