Bitter Melon. Indian Karela.

  1. You need to use a good pot to cook this dish.
  2. A lid that will close properly and would retain steam.
  3. Heat the Pot, Add oil, add cumin seeds, cook 2 mins., add chopped onions cook 5 minutes and add tomatoes cook 5 mins.
  4. Add sliced Karela and Masala.
  5. Mix well and cook 5 minutes.
  6. Add 1/2 cup water.
  7. Cover and reduce heat to simmer.
  8. Cook until tender.
  9. Add a little water if necessary, check periodically.
  10. Don't let it burn.
