Cheese and Thyme Stuffed Chicken
- 1 teaspoon olive oil
- 2 shallots, finely chopped
- 2 tablespoons pine nuts
- 2 tablespoons breadcrumbs
- 1 tablespoon thyme
- 2 ounces sharp cheddar cheese, grated
- 4 boneless skinless chicken breasts
- 8 slices prosciutto
- Preheat the oven to 400F Heat the oil in a pan and fry the shallots for 5min until golden.
- Add the pine nuts and cook for 2-3min until golden.
- Take off the heat, stir in the breadcrumbs and thyme and season well.
- Slice one chicken breast two thirds of the way through the middle and fill with a quarter of the breadcrumb mixture and a quarter of the cheese.
- Wrap 2 slices of prosciutto around and put on a baking sheet.
- Repeat with the other chicken breasts.
- Roast in the oven for 30min until the chicken is golden and cooked through.
