Sauteed Spicy Crawfish
- 1 1/2 cup cooked white rice
- 1 lb peeled crawfish tails
- 1/2 cup chopped green onions (tops only)
- 1/2 cup chicken broth
- 1 stick butter
- 1 tsp minced garlic
- 1 tsp tabasco sauce
- 1 tsp white pepper
- 1/2 tsp black pepper
- 1/2 tsp salt
- 1/2 tsp cayenne pepper
- 1/2 tsp dried sweet basil leaves
- 1/4 tsp dry mustard
- Combine salt, pepper, cayenne, dry mustard, and basil in a bowl and set aside.
- Place butter, onions, and garlic in a large deep skillet.
- Saute 1 minute on high.
- Add crawfish, Tabasco, and seasoning mix.
- Saute for approximately 3-4 minutes.
- Stirring occasionally.
- Slowly add chicken stock while moving pan back and forth on burner.
- Cook over high heat for another 5-6 minutes.
- Stirring occasionally.
- Serve immediately over rice.
