Sauteed Spicy Crawfish

  1. Combine salt, pepper, cayenne, dry mustard, and basil in a bowl and set aside.
  2. Place butter, onions, and garlic in a large deep skillet.
  3. Saute 1 minute on high.
  4. Add crawfish, Tabasco, and seasoning mix.
  5. Saute for approximately 3-4 minutes.
  6. Stirring occasionally.
  7. Slowly add chicken stock while moving pan back and forth on burner.
  8. Cook over high heat for another 5-6 minutes.
  9. Stirring occasionally.
  10. Serve immediately over rice.
