Done in 3 minutes! Super Easy Cucumber with Umeboshi Pickled Plum Sauce

  1. Pound the washed cucumber lightly as you roll it.
  2. It's fine if it breaks a little.
  3. Cut the cucumber into rolling wedges.
  4. Take out the stones from the umeboshi, and roughly pound.
  5. Put the cucumber in Step 2 with the mentsuyu and mirin in a plastic bag, and rub together for about a minute.
  6. Mix fairly rigorously.
  7. Serve topped with dried bonito flakes.
