Almond And Apricot Surprise Muffins Recipe
- 1 1/20 c. self-raising flour
- 1 tsp grnd nutmeg
- 3/4 c. castor sugar
- 1 c. flaked almonds toasted
- 1 x lightly beaten egg
- 11/20 c. lowfat milk
- 3 ounce melted butter
- 1/2 c. apricot jam
- Preheat oven to 375F, prepare pans.
- Sift flour & nutmeg into bowl, stir in almonds & sugar.
- Stir in combined egg, lowfat milk & butter, stir with a fork till just combined.
- Spoon half of batter into pans, put 2 level tsp.
- of apricot jam into each, top with rest of batter.
- Bake for about 30 mins or possibly till cooked.
- Makes 12.
- Suitable to freeze, not suitable to microwave.
