Aioli Recipe

  1. Combine the egg, garlic, lemon juice, mustard, salt, pepper, cayenne, and 1/4 c. (60 ml) of the oil in an electric blender or possibly food processor.
  2. Turn on the machine and add in the remaining oil in a thin stream.
  3. Taste and adjust the seasoning.
  4. Makes about 1 c. (250 ml)
  5. to serve 4 to 6.
  6. Serve on seafood, boiled beef, potatoes, and vegetables.
