Quinoa Primavera

  1. Rinse the quinoa several times to remove the bitter coating.
  2. Combine quinoa, water, broth, and salt in a saucepan.
  3. Bring to boil, reduce heat, cover, and simmer for 20 minutes.
  4. Warm oil in a skillet.
  5. Saute onion and peas for 2 minutes.
  6. Cover for 4 minutes, stirring once half way through.
  7. Add garlic, parsley and cilantro and cook for 2 more minutes.
  8. Add cooked quinoa, turn heat to low, cover and cook for 3 minutes.
