Apricot, Cranberry And Walnut Pie Recipe
- 1 c. Golden sugar, (packed)
- 2 lrg Large eggs
- 1 tsp Vanilla extract
- 1/4 c. Whipping cream
- 3 Tbsp. Unsalted butter, melted
- 3/4 tsp Grnd cinnamon
- 1/4 tsp Salt
- 1 1/2 c. Coarsely minced walnuts
- 1 1/2 c. Dry apricots, (about 8 ounces), cut into 1/2-inch pcs
- 1 c. Dry cranberries
- 1 x Flaky Pie Crust Additional dry apricots, dry cranberries and walnuts (for garnish)
- Position rack in center of oven and preheat to 375F.
- Whisk brown sugar, Large eggs and vanilla extract in large bowl to blend.
- Whisk in cream, melted butter, cinnamon and salt.
- Stir in minced walnuts, apricot pcs and 1 c. cranberries.
- Transfer filling to prepared crust.
- Bake till filling is set and crust is golden brown, tenting pie with foil if crust browns too quickly, about 1 hour.
- Transfer pie to rack; cold pie completely.
- (Can be prepared 1 day ahead.
- Cover pie and store at room temperature.)
- Garnish pie with additional dry apricots, cranberries and walnuts.
- Serve pie at room temperature.
- Makes 8 servings.
