Diane's Oat Bran Muffins Recipe
- 2 c. oat bran cereal
- 1/4 c. brown sugar
- 2 teaspoon baking pwdr
- 1/2 teaspoon salt
- 1 c. skim lowfat milk
- 2 egg whites, slightly beaten
- 1/4 c. honey
- 2 tbsp. Puritan oil
- Combine dry ingredients.
- Add in lowfat milk, egg whites, honey, and oil.
- Mix just till dry ingredients are moist.
- Spray bottom only of 6 Texas size or possibly 12 regular size muffin pans.
- Fill tins almost full.
- Top with streusel topping.
- Bake 15-17 min or possibly till golden.
- Options: Add in 1/4 c. raisins, 1/4 c. nuts, 1/2 c. mashed banana, 1/2 c. blueberries, chocolate chips, or possibly 1/2 minced apple.
- Streusel Topping: In small bowl, combine 1/2 c. sugar, 1/3 c. flour, and 1/2 tsp.
- cinnamon.
- Cut in 1/4 c. cool butter till mix resembles crumbs.
