Rhubarb Meringue Dessert
- 1 cup butter
- 2 cups flour
- 3 tablespoons sugar
- 5 cups rhubarb, chopped
- 2 cups sugar
- 1 cup cereal cream
- 4 egg yolks
- 4 tablespoons flour
- 14 teaspoon salt
- 1 orange, juice and rind of
- 6 egg whites, beaten until stiff
- 12 tablespoons white sugar
- 2 teaspoons vanilla
- Blend the butter,flour, and sugar and bake in a 9 x 13 pan for 8 minutes at 350.
- Blend together rhubarb, sugar, cereal cream, egg yolks, flour, salt, and orange rind/juice and pour over base.
- Bake for 45 minutes at 350.
