Chicken With Olives
- 5 garlic cloves, chopped
- 14 cup oil
- 2 medium tomatoes, chopped
- 3 lbs chicken, cut into 8 serving pieces
- 12 teaspoon turmeric
- 12 teaspoon pepper
- 2 cups green olives
- 1 lemon, juiced
- 12 cup fresh cilantro leaves, finely chopped
- In a large pot, saute the garlic in oil over medium heat until golden, about 3 minutes.
- Add the tomatoes and saute for 2 to 3 minutes more, until softened.
- Add the chicken, turmeric and pepper and cook over low heat, uncovered, for 15 minutes, turning occasionally.
- Add enough water to almost cover the chicken (about 1 cup), and then add the olives.
- Cover and simmer for about 30 minutes more, or until the chicken is almost tender.
- Add the lemon juice and cilantro and cook, uncovered for 15 minutes more.
- Serve hot.
