Long Island Summer X Tra Special Potato Salad Recipe
- 5 pound potatoes (translucent/soft skin)
- 4 1/2 pound fresh string beans, cooked
- 7-8 med. sized tomatoes, minced
- 2-3 c. minced fresh basil
- 2 lg. red onions
- Extra virgin olive oil and wine vinegar to taste
- Salt and pepper to taste
- Boil potatoes with skins.
- Cold, then peel.
- Boil string beans till tender.
- Cold.
- Put potatoes, beans, tomato and basil in bowl.
- Add in dressing.
- Cold and serve.
- Commercial Italian red vinegar and oil dressing may be used.
