Cinnamon Rasin Bread
- 4 cup flour
- 2 cup sugar divided
- 2 tsp baking soda
- 1 tsp salt
- 2 eggs
- 1/2 cup canola oil
- 2 cup buttermilk
- 1/2 cup rasins
- 3 tsp cinnamon
- preheat oven to 350F
- in large bowl combine flour, 1 1/2 cups sugar, baking soda and ssalt.
- in a small bowl whisk eggs, buttermilk and oil.
- stir wet into dry until just moist.
- stir in rasins
- combine remaining sugar and cinnamon and set asside
- spoon 1/2 the batter into 2 greased loaf pans
- sprinkle 1/2 the cinnamon sugar mix over batter then top with remaining batter then remaining cinnamon sugar mixture
- use a knife to cut thru the batter and swirl
- bake for 55 to 60 minutes
- cool in pan for 10 minutes then remove to wire racks to cool completly
- you can wrap in foil and freeze for up to three months
- to use a frozen loaf thaw at room tempurature and you're good to go!
