Lemony Cheescake Bars
- 14 ounces sweetened condensed milk
- 12 cup fresh lemon juice
- 1 12 teaspoons freshly grated lemon zest
- 23 cup butter, at room temperature
- 1 cup packed light brown sugar
- 1 12 cups flour
- 1 teaspoon baking powder
- 12 teaspoon salt
- 1 cup quick oatmeal
- Preheat oven to 350 degrees.
- In a small bowl, mix cond.
- milk, lemon juice and lemon zest.
- Set aside.
- In a large bowl, cream sugar and butter.
- Add flour, baking powder, salt and oatmeal.
- Mix until coarse crumbs form.
- Firmly press half of the crumb mixture onto the bottom of a buttered 8x12" baking dish.
- Pour condensed milk mixture on top.
- Cover with remaining crumb mix and press down gently.
- Bake for 25-30 minutes or until brown around edges.
- Chill before cutting.
