Peanut Crispies
- 1/4 cup vegetable shortening
- 1/4 cup butter or margarine
- 1 cup brown sugar
- 1 each eggs unbeaten
- 1/2 teaspoon vanilla extract
- 1 cup flour, all-purpose
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup rolled oats
- 1/2 cup corn flakes
- 1/2 cup peanuts, salted
- Melt shortening and butter over very low heat.
- Remove from heat and stir in sugar.
- Add egg and vanilla; beat well.
- Combine flour, soda, baking powder, and salt; sift into sugar mixture and mix well.
- Blend in oats, corn flakes, and peanuts.
- Shape dough into 1 inch balls.
- Place 2 inch apart on greased baking sheet.
- Bake at 350F (180C) for 12 to 15 minutes.
