Balsamic Roasted Sausages
- 12 thin sausages
- 2 tablespoons olive oil
- 6 sprigs thyme
- 9 ounces mushrooms, sliced
- 5 ounces cherry tomatoes
- 3 large tomatoes, quartered
- 2 tablespoons balsamic vinegar
- Heat the oven to 425F.
- Place the sausages in a roasting tin with half the oil and the thyme sprigs.
- Cook for 10 mins then add the mushrooms and tomatoes and drizzle over the remaining oil and the balsamic vinegar.
- Cook for a further 10 mins until the sausages are golden brown and cooked through.
- Serve the sausage mixture piled onto crusty bread rolls and some ketchup or relish if you like.
