Meal-In-A-Muffin
- 1 medium carrot
- 1 large Granny Smith, quartered and cored
- 1/2 c. vegetable oil
- 2 large eggs
- 1/3 c. sugar
- 2 tsp. vanilla extract
- 1/2 c. shredded coconut
- 1/3 c. raisins
- 1/2 c. pecan halves
- 3/4 c. whole wheat flour
- 1/2 c. rolled oats
- 3 Tbsp. wheat germ
- 1 tsp. baking soda
- 3/4 tsp. cinnamon
- 1/2 tsp. baking powder
- 1/4 tsp. salt
- 1/4 tsp. ground ginger
- 1/8 tsp. freshly grated nutmeg
- Preheat oven to 375u0b0.
- Shred carrot and apple in food processor.
- Set aside.
- Process the oil, eggs, sugar and vanilla until well blended.
- Add the carrot, apple and remaining ingredients.
- Divide the batter among greased muffin tins, filling them 3/4 full and bake in preheated oven until a cake tester inserted in the center comes out clean.
- Makes 12 muffins.
