Collard Greens

  1. Use a large skillet with a tight fitting cover.
  2. Melt bacon fat and heat olive oil on medium heat.
  3. Saute onion until transparent, a couple of minutes.
  4. Add garlic and and saute until fragrant, about 20 seconds.
  5. Mix in the greens, sesame oil, chili pepper flakes, salt, and sugar.
  6. Cover and cook until tender, 8-10 minutes.
  7. Serve with barbecue sauce.
