Easy Tomato and Basil Bread

  1. Preheat oven to 180C
  2. Cream butter, tomato paste, brown sugar and eggs
  3. Sift together flour, baking powder and bicarbonate of soda; stir in dried basil
  4. Gradually stir in creamed mixture into dry ingredients with tomato juice; dough may appear wet and sticky.
  5. Fold in the shredded Cheddar
  6. Spoon into lightly greased 15x21cm loaf tin (I prefer baking paper)
  7. Bake in oven for 40-50minutes or until skewer comes out clean.
  8. Serve warm or cooled with soups, casseroles, et cetera
