Easy Tomato and Basil Bread
- 125 grams butter
- 1 tbsp tomato paste
- 2 tbsp brown sugar
- 2 eggs
- 2 cup plain flour
- 1 tsp baking powder
- 1 tsp bicarbonate of soda
- 2 tsp dried basil
- 1/4 cup tomato juice (or diluted tomato paste)
- 1 cup shredded Cheddar
- Preheat oven to 180C
- Cream butter, tomato paste, brown sugar and eggs
- Sift together flour, baking powder and bicarbonate of soda; stir in dried basil
- Gradually stir in creamed mixture into dry ingredients with tomato juice; dough may appear wet and sticky.
- Fold in the shredded Cheddar
- Spoon into lightly greased 15x21cm loaf tin (I prefer baking paper)
- Bake in oven for 40-50minutes or until skewer comes out clean.
- Serve warm or cooled with soups, casseroles, et cetera
