Easy Pineapple Chicken
- 3 large chicken breasts
- 1/4 cup flour, all-purpose
- 1/2 teaspoon black pepper
- 10 ounces pineapple chunks canned
- 2 tablespoons vegetable oil
- 1/2 cup pineapple juice from can of pineapple
- 3 tablespoons soy sauce, tamari
- 1 teaspoon vinegar
- 1 tablespoon cornstarch
- Remove skin and any bones from chicken and chop into a bite sized cubes.
- Mix flour and pepper on a plate or shallow bowl and dredge chicken until coated.
- Heat oil over medium high heat in a skillet.
- Cook coated chicken until golden brown.
- Add pineapple and cook for 5 minutes more.
- In a small bowl, combine soy sauce, vinegar, and cornstarch.
- Add sauce to pan and simmer for 5 minutes
