Apple Relish Recipe
- 2 lb tart apples peeled, cored and sliced
- 2 c. granulated sugar
- 1/2 c. water
- 1 Tbsp. grnd ginger
- 3 1/2 ounce grnd almonds
- 1 1/2 c. raisins
- 4 tsp mustard seed
- 1 Tbsp. cayenne pepper scant measure
- 1 c. granulated sugar
- 1 c. white vinegar
- 1 Tbsp. table salt
- Combine first 4 ingredients in large saucepan.
- Bring to a boil over medium heat.
- Cook, uncovered, till apples are soft.
- Add in almonds, raisins, mustard seed and cayenne.
- Stir.
- Cook, uncovered, stirring often, till consistency of jam.
- In another saucepan, combine second amount of sugar, vinegar and salt.
- Stir.
- Boil, uncovered, over medium heat till it is reduced in quantity and thickens a bit.
- Stir often while thickening.
- Watch closely so it doesn't brown.
- Add in to apples.
- Stir well.
- Pour into warm sterilized jars to within 1/4 inch of top.
- Seal.
- Yield: 2 pints plus a small jar
