Chicken Diablo

  1. Preheat oven to 350 degrees.
  2. Spray a 9X13 glass baking pan with vegetable spray.
  3. Place raw halved chicken breasts or tenderloins equivalent in dish.
  4. Bake 20 minutes.
  5. While they are baking, in a small bowl, mix salsa, cumin and soup.
  6. Set aside.
  7. After 20 minutes remove chicken from oven.
  8. Place drained artichoke hearts around and between the chicken breasts.
  9. Pour sauce over it all and spread evenly.
  10. Bake for 25 minutes.
  11. Add sliced olives.
  12. Bake 5 minutes more.
  13. Good with couscous.
