Chicken Diablo
- 3 whole Chicken Breasts, Skinless, Boneless Cut In Half
- 3/4 cups Salsa
- 1/4 teaspoons Cumin
- 1 can Healthy Choice Mushroom Soup Undiluted
- 1 can Artichokes, Drained
- 1 can Black Olives, Sliced And Drained, You Can Use A Small Can
- Preheat oven to 350 degrees.
- Spray a 9X13 glass baking pan with vegetable spray.
- Place raw halved chicken breasts or tenderloins equivalent in dish.
- Bake 20 minutes.
- While they are baking, in a small bowl, mix salsa, cumin and soup.
- Set aside.
- After 20 minutes remove chicken from oven.
- Place drained artichoke hearts around and between the chicken breasts.
- Pour sauce over it all and spread evenly.
- Bake for 25 minutes.
- Add sliced olives.
- Bake 5 minutes more.
- Good with couscous.
